2 cups (4 sticks) butter, softened
1 ½ cups sugar
2 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
Ala Julia Child, this recipe is CHOCK FULL OF BUTTER! Still, it is a favorite of mine around the holidays because it is when I can use my antique cookie cutters to my heart’s content.
Preheat oven to 375 degrees F. Cream butter and sugar in a large mixing bowl until light and fluffy.
Beat in eggs and vanilla. Combine flour, baking powder, and salt in another bowl. Gradually add this to the butter mixture and mix well.
Divide dough in fourths (4 balls).
Roll-out one ball of dough at a time on a lightly floured surface to 1/8 inch thick. Keep remaining dough refrigerated. Cut into desired shapes with a floured cookie cutter (to keep the dough from sticking). Place 1” apart on an ungreased cookie sheet. Bake at 375 degrees F. for 6 to 8 minutes or until LIGHTLY browned.
Transfer cookies to a wire rack to cool (I like to bake them on a piece of PARCHMENT PAPER, which I easily slide off the pan and onto the rack or counter). Decorate. Yields about two dozen cookies, depending on how big the cutters. Serve up to your favorite hero, preferably one who works to protect our community for 24 hours a day, 7 days a week!

1- 6 ounce can frozen Orange Juice
1 cup whole or fat-free milk
¼ cup water
3 Tablespoons sugar (or artificial sweetener)
1 Teaspoon vanilla
10 to 12 ice cubes
Combine all ingredients in a blender and process until smooth. Serve with an orange wedge and enjoy with your favorite hero…I mean, cookie.

This recipe is easy as pie, decadent as the richest dessert, yet low in calories. Using a simple boxed cake mix and a can of fruit, this cake will bring a smile to everyone and satisfy your sweet tooth.
Preheat oven to 350 degrees F. Take 1 box of ANGEL FOOD CAKE MIX and 1 can of DOLE CRUSHED PINEAPPLE. (Do NOT follow box instructions)
Mix together by spoon in a large bowl. Spray an Angel Food pan (best) or Bundt pan (second best) with nonstick spray. Place pan onto a cookie sheet (to catch drips) and bake for 45 minutes.
Cool well, upend it onto a platter, and enjoy! Invite a few angels or satisfy a few demons, but make sure YOU SHARE THIS! Nancy Lee Badger

1 large fryer chicken
1-12 ounce bag Tortilla Rounds
1 1/2 cups grated Velveeta cheese
1 1/2 cups grated Mexican cheese (4 cheese)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Ro-Tel tomatoes…try the Mexican style with cilantro
2/3 cup chicken broth
1 large onion, diced
Boil the chicken until falling off the bone. Discard skin and bones. Cut chicken into small bite-sized pieces.
Mix together: cream of chicken and mushroom soups and the Ro-Tel tomatoes; heat over low heat until smooth. Then add broth. Preheat oven to 350 degrees F.
Spray a 9″ x 13″ pan with non-stick spray. Layer with 1/2 of the chicken, tortilla chips, diced onion, cheese, soup mixture in that order. Then repeat and bake 1 hour, uncovered.
Easy to duplicate this recipe and make two pans capable of feeding an entire shift of charming, complex, and heroic police officers. Nancy Lee Badger

¾ cup plus 1 Tablespoon flour
1 ½ teaspoon baking powder
¼ teaspoon salt
¼ cup chopped fresh parsley
½ cup 1% lowfat milk
Mix flour, baking powder, and salt in a medium bowl. Stir in the parsley. Add the milk just until blended. These can top a stew or chili.
To finish cooking, drop into 12 dollops on top in a covered pot. Cook 5 minutes, then cover the pot and cook 10 minutes more or until a toothpick in the dough comes out clean.
Ooh! DoughBoys! Soldiers! All our heroes will love these.

2 cups (12 ounces) milk chocolate chips
½ cup raisins
1 Tablespoon solid shortening
½ cup chopped, slivered almonds
In a double boiler over simmering water, melt chocolate chips and shortening, stirring until smooth. Remove from heat.
*if using a microwave- put in a microwave-safe dish, heat then stir, heat then stir until smooth. Do not burn. Stir in raisins and nuts. Drop by tablespoonfuls onto waxed paper on top of a cookie sheet.
Chill in the refrigerator or freezer until ready to serve.These taste AND smell so much better than the real cow pies, out on the range. Bring a smile to our western heroes, the cowboy. Can be easily doubled or quadrupled to feed ‘em all!

1 pound sausage (bulk) - cut into cubes
1 chopped onion
1 Tbsp worcestershire sauce
2 pkgs crescent rolls
1 cup shredded mozzerella cheese
Cook sausage, onion and worcestershire sauce. Drain fat. Take 1 pkg of crescent rolls and spread in bottom of 13″ by 9″ pan and press.
Add sausage mixture and cover with the cheese. Cover with the second pkg of crescent rolls. Cook according to the rolls directions.
Serves 4-6 and can be easily quadrupled to feed the entire heroic platoon.

When we met sons Rob and Joey at the New Hampshire Highland games last week, they gifted us with bags of fresh-picked Vermont high-altitude apples. What flavor! I cannot wait to make this recipe to enjoy their scent and flavor. Yum!
4-5 apples peeled, cored, and sliced thin
3/4 cup flour
3/4 cup packed brown sugar
1/2teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/3 cup melted butter
9″ pie pan
Preheat oven to 375 degrees.
Place prepared apples in the pie pan. Measure the salt, flour, sugar, cinnamon, and nutmeg in a bowl. Melt butter and pour into this bowl. Mix with fork. Spoon mixture over apples, covering completely.
Bake for 35 minutes or until apples are soft.
Apple picking season is here! Bake a couple and donate one to your local firefighters, paramedics, police, troop leaders, or whoever is YOUR unsung hero. And keep reading about all the heroes filling the great books I review!

2 cups flour
2 teaspoons baking soda
1 teaspoon salt
¼ teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup salad oil
1 ½ cups sugar
2 cups Zucchini, grated
2 teaspoons vanilla extract
Confectioners sugar
Preheat oven to 350 degrees F. Grease a 13” by 9” by 2” pan. Sift the flour, baking soda, salt, baking powder, and cinnamon onto a square of wax paper.
Combine the eggs, oil, sugar, zucchini, and vanilla in a large mixing bowl. Beat until well mixed. Stir in the flour mixture until smooth.
Pour into the prepared pan. Bake about 40 minutes or until center springs back when lightly pressed with fingertips. Cool in pan on a wire rack.
Mix a small amount of Confectioners sugar with water in a small measuring cup. Pour this glaze in big ‘Z’s over the bread. Zorro, my favorite Spanish Hero, rides again! Yum!
