SLEEPLESS IN SCOTLAND by Karen Hawkins

Karen has come up with another great story interwoven with twists and turns, descriptive scenery, witty dialog, and a lusty man and scholarly heroine who find themselves in a situation not of their choosing. She pits two sensible characters striving to save their siblings from the other while getting in over their heads.

When a twin sister’s rescue goes awry, Catriona Hurst finds her future in the hands of handsome Hugh MacLean. Neither one wants to marry, but after they are caught alone, Hugh will not allow her to be ruined.

Whisked away from prying eyes in London to Hugh’s estate in Scotland, Triona discovers the man has secrets…including three lovely daughters who do not want to share his affections.  Hugh became a favorite hero of mine when I saw how he interacted with his children while trying hard to be a better husband.

OLD FASHIONED DOUGHBOY DUMPLINGS

¾ cup plus 1 Tablespoon flour

1 ½ teaspoon baking powder

¼ teaspoon salt

¼ cup chopped fresh parsley

½ cup 1% lowfat milk           

      Mix flour, baking powder, and salt in a medium bowl. Stir in the parsley. Add the milk just until blended. These can top a stew or chili.

      To finish cooking, drop into 12 dollops on top in a covered pot. Cook 5 minutes, then cover the pot and cook 10 minutes more or until a toothpick in the dough comes out clean.

      Ooh! DoughBoys! Soldiers! All our heroes will love these.

COWBOYS’ FAVORITE COW PIES

2 cups (12 ounces) milk chocolate chips

½ cup raisins

1 Tablespoon solid shortening

½ cup chopped, slivered almonds 

      In a double boiler over simmering water, melt chocolate chips and shortening, stirring until smooth. Remove from heat.

      *if using a microwave- put in a microwave-safe dish, heat then stir, heat then stir until smooth. Do not burn. Stir in raisins and nuts. Drop by tablespoonfuls onto waxed paper on top of a cookie sheet.

      Chill in the refrigerator or freezer until ready to serve.These taste AND smell so much better than the real cow pies, out on the range. Bring a smile to our western heroes, the cowboy. Can be easily doubled or quadrupled to feed ‘em all!

ALWAYS THE SCOUNDREL by Suzanne Enoch

SHOCK & AWE SAUSAGE BREAD

1 pound sausage (bulk) - cut into cubes

1 chopped onion

1 Tbsp worcestershire sauce

2 pkgs crescent rolls

1 cup shredded mozzerella cheese

Cook sausage, onion and worcestershire sauce.  Drain fat.  Take 1 pkg of crescent rolls and spread in bottom of 13″ by 9″ pan  and press.

Add sausage mixture and cover  with the cheese.  Cover with the second pkg of crescent rolls.  Cook according to the rolls directions.   

Serves 4-6 and can be easily quadrupled to feed the entire heroic platoon.
