2 cups flour
2 teaspoons baking soda
1 teaspoon salt
¼ teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup salad oil
1 ½ cups sugar
2 cups Zucchini, grated
2 teaspoons vanilla extract
Confectioners sugar
Preheat oven to 350 degrees F. Grease a 13” by 9” by 2” pan. Sift the flour, baking soda, salt, baking powder, and cinnamon onto a square of wax paper.
Combine the eggs, oil, sugar, zucchini, and vanilla in a large mixing bowl. Beat until well mixed. Stir in the flour mixture until smooth.
Pour into the prepared pan. Bake about 40 minutes or until center springs back when lightly pressed with fingertips. Cool in pan on a wire rack.
Mix a small amount of Confectioners sugar with water in a small measuring cup. Pour this glaze in big ‘Z’s over the bread. Zorro, my favorite Spanish Hero, rides again! Yum!

That is too, too funny. I asked my sister to pick up a zucchini at the Raleigh Farmer’s Market tomorrow. Have not made this in a while, but I will for the holiday weekend.

I was given a couple of zucchinis at work yesterday and didn’t know what I would do with them. Can’t believe you have a recipe with zucchini in it! Can’t wait to try it on this holiday weekend.
