1 egg
1/2 cup milk
1/4 cup salad oil
1 1/2 cup all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoons salt
1 cup fresh or frozen blueberries
Preheat your oven to 400 degrees. Grease or spray the bottom of 12 medium muffin cups. Beat egg in mixer bowl. Stir in the milk and salad oil. Mix in the remaining ingredients EXCEPT blueberries JUST until flour is moistened. Batter should be lumpy. Fold in berries, gently. Spoon the mixture evenly into the muffin cups. Bake 19 to 24 minutes until lightly browned on top. Immediately removed from pan to a cooling rack. For an extra fancy (and extra sugary topping) brush with maple syrup and sprinkle lightly with sugar. This recipe can be doubled or quadrupled to serve the entire engine company! Enjoy!

One of my favorite books finding a permanent home on my shelf is ‘A Fire Fighter in the Family’ by Trish Milburn. The cover originally caught my eye. An all American male and a uniformed woman washing a black dog in a washtub in front of two fire engines? Heaven to this former EMT and volunteer firefighter. Plus, this was another Harlequin American Romance and I knew the book would be fun to read. Little did I know this also included a murder mystery! Hurt and pain mixed with family squabbles, sexual tension and a great beachside location made this a hard-to-put-down treat. In the end, both the hero–troubled Zac Parker–and our heroine–Randi Cooke–led me on a great adventure while proving HEROES DO EXIST!
