This tasty bring-along-to-any-party appetizer looks like a pizza but tastes like Heaven! This will please your favoite Hero and can be easily doubled to feed the whole crew. It has become my family’s favorite at picnics and other gatherings.
4 ounces Cream Cheese
1 cup Cottage Cheese
2 T. Taco Seasoning
1 cup shredded Lettuce
1 Onion, chopped
1/2 to 1 med. Green Pepper, chopped
1/2 medium Tomato, chopped
1 can Re-Fried Beans (optional)
1 can Diced Green Chilies (optional)
4 ounces bottled Salsa
8 ounces finely shredded Cheddar or Mexican Blend Cheese
1 bag Tortilla Chips
Cube cream cheese in a bowl and add cottage cheese and Taco seasoning. Mix with fork (or food processor) then a spoon until smooth. Spread in a 12″ to 14″ round pan or tray or platter. Using a rubber spatula, spread re-fried beans over cheese layer, not quite to the edge. Layer lettuce, onion, pepper, and spoon on the salsa. Layer chilies and the tomato. Sprinkle entire top with the shredded cheese. Garnish edge with tortilla chips AFTER chilling at least one hour. This is best made the same day as you plan to serve it. To serve, dip chips through the entire layers. Your mouth will explode with flavors. Serve with chilled beer or my favorite…a big, iced Margarita!

I bought Mary Margret Daughtridge’s new book ‘SEALed with a Promise’ and wondered if it would draw me in as her first book had. To be a good judge, I reread my copy of ‘SEALed with a Kiss’. Yes, friends, Mary has brought real men to life. She starts with Caleb Dulaude, a HERO with a capital ‘H’, when we find him hot in the middle of an assassination attempt on a senator in Kandahar, Afghanistan. How he meets Emmie Caddington in North Carolina at the wedding of another SEAL pulls you into a love story with limitations and an undercurrent of revenge. Pulls and tugs on your heart will keep you reading chapter to chapter as Mary weaves characters who come to life amid southern values, old secrets, and normal family problems. ‘SEALed with a Promise’ is filled with people I love to report about the most…HEROES!

1 egg
1/2 cup milk
1/4 cup salad oil
1 1/2 cup all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoons salt
1 cup fresh or frozen blueberries
Preheat your oven to 400 degrees. Grease or spray the bottom of 12 medium muffin cups. Beat egg in mixer bowl. Stir in the milk and salad oil. Mix in the remaining ingredients EXCEPT blueberries JUST until flour is moistened. Batter should be lumpy. Fold in berries, gently. Spoon the mixture evenly into the muffin cups. Bake 19 to 24 minutes until lightly browned on top. Immediately removed from pan to a cooling rack. For an extra fancy (and extra sugary topping) brush with maple syrup and sprinkle lightly with sugar. This recipe can be doubled or quadrupled to serve the entire engine company! Enjoy!

One of my favorite books finding a permanent home on my shelf is ‘A Fire Fighter in the Family’ by Trish Milburn. The cover originally caught my eye. An all American male and a uniformed woman washing a black dog in a washtub in front of two fire engines? Heaven to this former EMT and volunteer firefighter. Plus, this was another Harlequin American Romance and I knew the book would be fun to read. Little did I know this also included a murder mystery! Hurt and pain mixed with family squabbles, sexual tension and a great beachside location made this a hard-to-put-down treat. In the end, both the hero–troubled Zac Parker–and our heroine–Randi Cooke–led me on a great adventure while proving HEROES DO EXIST!

2 cups cooked ham, ground up
1 green pepper,chopped
1 medium onion, chopped
1 medium can corn
1 tsp. Worcestershire sauce
1 can Cream of Mushroom soup
1/2 cup plain bread crumbs
Preheat oven to 350 degrees. Mix all ingredients (except bread crumbs) together and place in medium (1 1/2 to 2 quart) casserole dish. Sprinkle with bread crumbs. Bake for 30 to 40 minutes. Serves 4 to 5 people.
You can easily double or triple this recipe to feed the entire crew!

A hero or heroine refers to fictional or historical characters that display courage and the will for self sacrifice. Heroism is performed for the greater good and to upkeep moral excellence.Stories of heroism may serve as moral examples. Hero worship can be a good thing or a bad thing. Many romance novels extol the virtues of the hero but some heroes are close to the edge of evil…until they meet the woman of their dreams…our heroine.Today’s romance novels combine action, adventure, intimacy (all levels), travel, family, intrigue and much more. Happy Ever After is a must, yet the hero’s journey to that point takes twists and turns, black moments and heartache. Through it all, the hero comes through thriving.My dad is one of my favorite heroes. Raising three little girls could drive any sane man nuts. With him as my hero, we traveled cross country, had adventures which included traipsing about national parks, learned new things, and witness him living his life loving our mom.Do you have a favorite hero (real or fictional)?
