2 Medium Onions 1c. Shredded Cheddar Cheese
2# Ground Beef 3c. milk
1tsp. Salt 1/2 tsp. Pepper
4 Eggs 1 1/2c. baking mix (i.e. Bisquik)
Preheat oven to 400 degrees. Grease two 10″ pie pans. Saute onions until soft in a tablespoon of oil, add ground beef and cook until brown. Drain. Sprinkle mixture with the salt and pepper and spread in the pans. Sprinkle with cheese. Beat eggs, milk, and baking mix in a bowl. When smooth, pour over pies. Bake until golden brown, for approximately thirty minutes.
This recipe can be easily doubled, quadrupled, etc. to feed the whole fire department!

The thinking behind ‘Rescuing Romance’ is to give credit where credit is due to the heroes of the romance industry. Whether fictional or real, we all need heroes.
My real life heroes consist of my husband and two sons. We have been through a lot together and I believe Rich and I raised them to the best of our ability. There were tough times but we worked through them…together.
With the boys grown and out on their own, I am dedicating this blog to all the heroes. Watch this space for information, book reviews, author interviews, firehouse recipes, and much more.
